Banana bread: why it became the main quarantine dish, and top 3 recipes from the stars
The banana bread recipe first appeared in an American cookbook in the 1930s. Then they came up with several more variations of its preparation, and later, special mixtures-powders for baking. In our country, banana bread became especially popular a couple of years ago after the publication of the book by Sasha Novikova, the founder of How to Green, an Internet project about a healthy lifestyle. Then her recipe was published by all glossy publications, and healthy lifestyle bloggers and stars began to post the resulting bread on Instagram. And there is an explanation for this – finally, the favorite dish of Meghan Markle, Chrissy Teigen and the Karadashian sisters can be prepared in their own kitchen. And without much expense and effort – the ingredients and cooking method are so simple that even a beginner can handle them.
After the wave of popularity, banana bread was forgotten for a while. And they remembered two months ago, when they stayed within four walls in quarantine. What to cook to make it easy, quick, beautiful and tasty? Banana bread, of course! And rushed to Instagram photos of the dessert, under the Russian tag # banana bread – now there you can find more than 7 thousand posts with updates (attention!) Every hour.
At lockdown, by the way, it was cooking and especially baking that became the main pleasure even for those who had never come to the stove before (read the column of the editor-in-chief of BeautyHack.ru here). Cooking has become a kind of stress reliever, so the term “procrastinating” is now being Google several times more often than before.
Returning to banana bread, we found many different variations on the net – with Greek yogurt, like Sasha Novikova’s; maple syrup and chocolate like Meghan Markle; coconut like Chrissy Teigen.
See the most interesting recipes for banana bread, which are already impossible to resist in the description! Just remember – this dish is high-calorie, and the isolation will end soon, so the rule “in moderation” has not been canceled.
Sasha Novikova’s recipe
- 250 g whole grain flour
- 2 large eggs
- 80 g Greek yogurt
- 4 ripe bananas
- 1 tsp soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 115 g unsalted butter
- 150g brown or coconut sugar
- 1 tsp vanilla extract
- 100 g walnuts or pecans
Preheat oven to 180 ° C. Line a baking tray with baking paper or oil.
In a large bowl, combine flour, salt and cinnamon. Melt the butter until soft, but do not let it heat up. Whisk it with sugar on high speed for 2 minutes. Add the eggs one at a time, beating well each time with a mixer on medium speed. If you are using aquafaba, beat it with a mixer until thick. After that, vanilla, yogurt and bananas are sent to the mixture. Mix all ingredients until smooth. Stir in the dry ingredients at a slow speed, but do not overdo it with a mixer at this stage. Add nuts.
Place the mixture in a baking dish, top with bananas, cut into thin circles. Place in the oven for 60-65 minutes. If you see that the bread begins to brown a lot, you can cover it with foil after 30 minutes.
Wait for the bread to cool completely.
