1 orange
500 g carrots, peeled and cut into strips
1 garlic clove, grated
4 tbsp olive oil
Salt to taste
2 tsp lime juice
¾ a glass of buckwheat
2 pieces of chicken breast
¼ bunch of dill

Let’s get started

Peel the orange, remove the seeds, cut the pulp into small pieces.

Preheat oven to 200 ℃. Place the carrots and garlic on a baking sheet, drizzle with 2 tablespoons of olive oil and season with salt. Bake until the carrots are browned (15-20 minutes). Add orange, lime juice to hot carrots, mix everything.

Cook buckwheat. Cook the chicken fillet in a skillet by frying it on both sides in olive oil.

Transfer the buckwheat to a skillet and fry in olive oil for 5 minutes, stirring constantly, until the grains are crispy.

Place buckwheat on a serving plate, sprinkle with dill, then a mixture of carrots and oranges and chicken fillet. Sprinkle everything with lime juice and olive oil. Serve!

Stuffed peppers with buckwheat

You will need

120 g buckwheat
4 tbsp olive oil
2 medium red onions, chopped into strips
1 small clove of garlic, finely minced
1.5 tsp mixture of cumin and coriander
1 tbsp brown sugar
2 tbsp wine vinegar
20 g roasted pistachios
20 g roasted chopped hazelnuts
3 finely chopped dates
Half a bunch of parsley
3 large red peppers

Let’s get started

Cook buckwheat. Heat 2 tablespoons olive oil in a medium skillet over medium heat. Add onions and simmer for 5-7 minutes. Then the garlic and spice mixture, simmer for another minute. Add sugar and after 3 minutes add vinegar.

Mix the resulting caramelized onion with buckwheat and stir well. Add the remaining olive oil, nuts, dates and half a serving of parsley to the mixture, and season well.

Place the peppers on a baking sheet and cook in the oven at 200 ° C for 20 minutes. Let the peppers cool, remove the top and seeds. Put the buckwheat mixture inside and serve with parsley.

Risotto with buckwheat

1 cup buckwheat
100 g porcini mushrooms
500 ml chicken stock
1 medium onion, cut into strips
2 cloves of garlic
4 tbsp olive oil
4 tbsp cream
50 g parmesan
100 ml dry white wine
Thyme to taste
Salt pepper

Let’s get started

Heat olive oil in a skillet. Fry the onion and garlic until translucent. Add chopped mushrooms, salt, pepper, thyme and cook for 2 minutes. Add buckwheat and reduce heat. Simmer for a few minutes.

Add broth to the pan in small portions, stirring occasionally and letting it boil down completely. When it is absorbed, add a little more. And so on until the broth ends.

After 15 minutes, pour in the wine and increase the heat. When the wine has evaporated, there is a turn of cream and grated cheese. Leave the risotto on the fire for a couple of minutes and serve.

Buckwheat with baked pumpkin

2 cups buckwheat
400 g pumpkin
2 large onions
6 cloves of garlic
4 tbsp olive oil
½ tsp paprika
½ tsp curry

Let’s get started

Cook buckwheat. Preheat oven to 180 ° C. Peel the pumpkin by cutting it into small pieces, chop the onion (in half rings) and the garlic (each clove in half).

Make a seasoning mixture by combining butter with salt, sugar, curry and paprika. Sprinkle generously with the pumpkin, onion and garlic spices, put everything on a baking sheet and send it to the oven. Bake for 15-20 minutes.

250 g buckwheat
250 g oyster mushrooms
1 clove of garlic
200 ml cream
Sun-dried tomatoes
60 g Parmesan (grated)

For bolognese sauce

1 kg beef (preferably a scoop)
300 g celery
300 g onions
3 carrots
500 ml dry red wine
4 cloves of garlic
500 g tomato sauce
50 ml olive oil
Rosemary

Let’s get started

Start by making the sauce: chop the celery, onions and carrots using a meat grinder. Then do the same with the meat. Heat olive oil in a skillet and sauté the garlic with a rosemary branch, then remove it. Add vegetables to the garlic and simmer the mixture for another 8 minutes.

Then add the meat, fry it until half cooked, and then pour the wine into the sauce. Simmer for another 10 minutes and add tomato sauce. Leave on fire for 40 minutes. Season with pepper, salt and sugar.

Cook buckwheat. Peel and chop the mushrooms. Fry them with garlic in oil. Add buckwheat to them and simmer a little more.

Heat the cream, mix it with the parmesan.

Put the sauce on the bottom of the plate, then buckwheat, on top – sauce and sun-dried tomatoes.

Warm salad with buckwheat and beets

You will need

2 cups buckwheat
3 large beets
50 g spinach
2-3 large mushrooms
½ part leek
2 large cloves of garlic (pre-minced)
1 tsp rosemary
1/3 tsp salt
2 tbsp chopped hazelnuts
3 tbsp olive oil
2 tbsp balsamic vinegar
Parsley for serving

Let’s get started

Preheat oven to 200 ° C. Peel the beets and cut them into large cubes.

Combine dry rosemary and sea salt in a mortar.

Place the beetroot pieces in a baking dish. Brush it with a tablespoon of olive oil and balsamic vinegar, and season with a mixture of rosemary and pepper. Bake for about 40 minutes until tender.

Cook buckwheat.

Heat the remaining two tablespoons of olive oil in a skillet. Add chopped leeks and sauté over low heat until tender. Add the diced garlic and saute until clear and flavorful. Add mushrooms and grill until tender. Season with salt, pepper and a tablespoon of balsamic vinegar. Add spinach and cooked buckwheat. Mix well.

Put the buckwheat on plates, on top – fried beetroot slices, hazelnuts and fresh parsley.

2-3 medium potatoes, peeled
1 cup buckwheat
1 tbsp olive oil
Salt and pepper
Paprika, coriander, dry parsley optional

Cook buckwheat. Grate the potatoes on a fine grater. Squeeze the resulting juice with your hands and place the potato pulp in a container.

Chop the boiled buckwheat with a fork and mix it with the potatoes. Add salt, pepper and other spices. Form balls with your hands. You should have about 30–35 meatballs.

If you want a thinner consistency, you can add more broth towards the end.

Buckwheat porridge with coconut milk with caramelized plums

1.5 cups coconut milk
1 glass of water

2 plums
1 tbsp honey (or maple syrup)
Chia seeds
Rice milk

Let’s get started

Pour coconut milk into a saucepan, add buckwheat, salt and cinnamon. Bring to a boil and simmer porridge over low heat for 15 minutes. Cut the plum into thin slices. Pour honey into a preheated skillet, place plum slices and sprinkle with chia seeds. Cook over medium heat for 5 minutes, stirring occasionally with a spatula. Serve the porridge in a deep bowl, garnish with plums and toss with rice milk.
