20 g butter – 20 g
White onion – 1/2
Thyme sprigs – 3 pcs.
Dry red wine – 200 ml.
Chocolate 99% – 30 g
Salt, pepper, stevia to taste

Preparation:

Lightly salt the steak with coarse salt and pepper liberally on one side. Add a little olive oil to a very well-heated frying pan, put the meat, press well. Season the other side with salt and pepper. The piece should brown very well – for a total of 1 minute on each side. Then fry the sides, rolling the steak over the pan. Add unpeeled garlic clove, thyme sprig and butter to the meat. It is good to pour the melted butter over the meat, collecting it with a spoon. All this will take literally 1-2 minutes. We flambé: we take cognac, sprinkle the meat abundantly and set it on fire. In principle, this stage can be omitted. But flaming gives the dish a special taste and aroma due to alcohol and fire. A long lighter will help here. And most importantly, turn off the hood! Transfer the meat to the wire rack and rest for a couple of minutes. If desired, if you want to cook until more cooked, put it in the oven at 200 ° C for a few minutes (the number of minutes depends on the desired degree of roast). Then fry the onion in butter with thyme leaves for 1-2 minutes, until the onion becomes transparent. Pour the wine and boil it over high heat until the volume is reduced by three times.
