Weekend Recipe: Mediterranean Vegetables with Buffalo Mozzarella
REditing BeautyHack teamed up with VIVAMAYR, a network of Austrian detox clinics, to share a delicious and healthy recipe for this weekend. The main thing is that it will take no more than 20 minutes to prepare it, and the taste will remind you of a vacation in the Mediterranean Sea.
Ingredients (for 4 servings):
4 tomatoes
1 yellow pepper
1 red pepper
1 small vegetable marrow
1 small eggplant
1 fennel onion
3 tbsp olive oil (second pressing)
Basil, salt.
3 tablespoons balsamic vinegar
500 g Buffalo mozzarella
For refueling
4 tablespoons olive oil, salt and basil.
Preparation:
Cut vegetables into cubes of the same size and place them in a preheated skillet with olive oil. Add basil, salt and simmer until tender. Add balsamic vinegar and stir well. Place vegetables on a plate.
Place the diced Buffalo mozzarella slices with the vegetables. Season the dish with olive oil mixed with salt and basil before serving.
